Last night I ate a very good dish with fish, vegetables, and a cold home-made salad I invented and generally eat in summer because it’s very refreshing!
All you need to do it to chop very finely all the following ingredients (organic and well washed).
– tomatoes (previously peeled)
– red peppers
– red onions (optional)
– chop very finely the vegetables and herbs. Mix everything together
– if you have a blender, blend the herbs with 2-3 tablespoons of the mixture
– mix everything well and ad some sea salt (I used Himalayan pink salt), pepper, and olive oil.
Can be served cold or tepid. My guest really loved it (along with fish, brown rice and broccoli)! 🙂
